Saturday Afternoon Baking

Today is the first day this week I've been able to be a (relatively) productive individual for more than fifteen minutes at a time...but you don't want to read about my continuing bout with illness; you want to read about these delicious muffins I just pulled out of the oven.


Doesn't that peanut butter-chocolate-banana goodness look so yummy? Unfortunately, I don't have step-by-step instructions with pictures, but don't let that deter you from making these scrumptious treats (and if you need a step-by-step guide, head over to Kelly's blog):


Peanut Butter Banana Chocolate Chip Muffins

2-1/2 cups all-purpose flour
1/2 cup sugar
1/2 cup packed, golden brown sugar
1 Tablespoon baking powder
3/4 teaspoon salt
1/4 teaspoon cinnamon
2-3 large ripe bananas
1 cup milk
3/4 cup smooth peanut butter
3 Tablespoons canola oil
1 teaspoon vanilla
1 large egg
1 cup semi-sweet chocolate chips

Preheat over to 350 degrees. In a large bowl, sift together flour, sugar, brown sugar, baking powder, salt, and cinnamon; mix well.

In another mixing bowl combine mashed bananas, milk, peanut butter, egg, oil, and vanilla; mix well (I used my mixer for this part). Add this to the dry mixture previously prepared; mix just enough to combine. Stir in chocolate chips.

Spray muffin tins with cooking spray and fill tins 3/4 full. Bake for 20-25 minutes or until a toothpick comes out clean.

Yield: 18 full-size muffins (easily doubled, I imagine)

    .....if you will let me come to your house to eat some of your muffins, because we all know that I am not actually going to cook any (and that is probably a good thing!)
